Probiotic miso beet soup

Serves 2

INGREDIENTS

4 roasted or cooked beets
2 garlic cloves
1 cup of homemade bone broth
4 cups of water
EVOO
S&P
1 tbsp white miso
Lemon juice
Toasted sesame seeds or pepitas to garnish (optional)

 

PREPARATION

  1. Saute the garlic cloves over medium heat. Add the beets.
  2. Add the bone broth, water, salt and pepper, cover with the lid and let simmer for 10 mins- the beets are already cooked.
  3. In a blender or a hand mixer, blend everything well.
  4. Add the miso and continue cooking for 10 mins more.
  5. Add lemon juice to taste.
  6. Serve with toasted sesame seeds or pepitas.
