Sweet potato with tahini & dates

Serves 1

INGREDIENTS

1 sweet potato
2 tbsp tahini
4 dates
Sesame seeds
Pepitas

PREPARATION

  1. Roast the sweet potato at 200C for about 45 mins. Poke the sweet potato with a fork so that it bakes evenly.
  2. Remove from the oven, cut lengthwise and let it cool.
  3. Toast the pepitas and sesame seeds in a small pan
  4. Cut the dates in chunks.
  5. Drizzle the sweet potato with tahini and top it off with the dates and the toasted nuts.
