1 sweet potato2 tbsp tahini4 datesSesame seedsPepitas
- Roast the sweet potato at 200C for about 45 mins. Poke the sweet potato with a fork so that it bakes evenly.
- Remove from the oven, cut lengthwise and let it cool.
- Toast the pepitas and sesame seeds in a small pan
- Cut the dates in chunks.
- Drizzle the sweet potato with tahini and top it off with the dates and the toasted nuts.
