Sweet potato with onions & avocado

Serves 1

INGREDIENTS

1 sweet potato, roasted and cooled
1/2 avocado, diced
1/2 onion
lemon juice to taste
S&P
Cilantro leaves
EVOO

PREPARATION

1. Roast the sweet potato at 200C for about 45 mins. Poke the sweet potato with a fork so that it bakes evenly.
2. Once it cools down, top it off with the diced onion and avocado.
3. Drizzle with EVOO and lemon juice. Add salt and pepper and cilantro leaves.
