1 sweet potato, roasted and cooled
1/2 avocado, diced
lemon juice to taste
- Roast the sweet potato at 200C for about 45 mins. Poke the sweet potato with a fork so that it bakes evenly.
- Once it cools down, top it off with the diced onion and avocado.
- Drizzle with EVOO and lemon juice. Add salt and pepper and cilantro leaves.
