Roasted Sweet Potato With Miso Tahini Sauce

Serves 1

INGREDIENTS

1 sweet potato cut in quarters
1tbsp neutral oil such as grapeseed
2 tbsp tahini
1 tbsp white miso
1 tbsp rice vinegar
1 spring onion
sesame seeds

 

PREPARATION

  1. Toss the sweet potatoes with some oil and roast about 45 minutes at 200C
  2. Mix miso, tahini and vinegar till combined.
  3. Spread the tahini sauce on a plate. Place the sweet potatoes on top. Sprinkle with spring onions and sesame seeds.
