Roasted cauliflower with lemon zest and jalapeno

"Eat your greens" but make it tasty.

INGREDIENTS

1 cauliflower cut into bite-size florets
1 lemon zest & juice
1 jalapeno seeded and thinly sliced
1 spring onion diced
Fresh cilantro
Salt & pepper
EVOO

PREPARATION

  1. Preheat the oven at 220C
  2. Spread the cauliflower on a baking dish and sprinkle with salt, pepper and EVOO to taste. Roast until golden brown and crispy, about 30 minutes.
  3. In a jar, mix the EVOO, lemon juice and lemon zest, spring onion, cilantro, salt and pepper and shake well.
  4. When the cauliflower is ready, transfer to a serving dish and sprinkle with the vinaigrette.
