"Eat your greens" but make it tasty.
1 cauliflower cut into bite-size florets
1 lemon zest & juice
1 jalapeno seeded and thinly sliced
1 spring onion diced
Salt & pepper
- Preheat the oven at 220C
- Spread the cauliflower on a baking dish and sprinkle with salt, pepper and EVOO to taste. Roast until golden brown and crispy, about 30 minutes.
- In a jar, mix the EVOO, lemon juice and lemon zest, spring onion, cilantro, salt and pepper and shake well.
- When the cauliflower is ready, transfer to a serving dish and sprinkle with the vinaigrette.
