Beluga Lentils Salad with Smoked Salmon and Pickled Onions

I am obsessed with lentils. I love, love, love everything about them. This is my favourite lentils salad, and the kids like it too. Lentils and fish make an excellent combination. You can also make it with any good quality canned tuna.

INGREDIENTS

For the pickled onions

1 large white onion cut into rings through a mandoline
Juice of 2 lemons
1tsp sugar
1tsp sea salt

2 cups black beluga lentils cooked
1 pack of good quality smoked salmon

or

1 can of good quality tuna
1 jalapeno
1 chilli pepper
1 bell pepper
1 tomato cut in chunks
2tbsp pickled cucumber
1tbsp capers
2tbsp olives
Cilantro & chives
EVOO
1tsp dry mustard
Salt and white pepper to taste

PREPARATION

  1. Prepare the pickled onions: In a bowl, add the lemon juice, sugar and salt. Stir to combine. Add the onions and let sit for at least 30 minutes. Make sure the onions are fully covered in the lemon juice.
  2. In a salad bowl, add the cooked lentils.
  3. Add the peppers and tomato.
  4. Add the pickled onions. Reserve the brine.
  5. Add the salmon.
  6. Add the pickled cucumbers.
  7. Cut the herbs, cilantro and chives, and add on top.
  8. Vinaigrette: in the onions brine, add EVOO and the mustard and stir well.
  9. Pour the vinaigrette over the salad.
  10. Serve cold.
