The traditional Scottish cookie is glorious in all its simplicity. My kids could eat the whole batch for dinner with milk. The key here is the high quality of butter, soft at the consistency of mayonnaise. Also, always freeze your cookies before baking
The first and most simple rule: Carbonara is made with eggs, not cream. Once you make it, you will see how much easier it is. I have used guanciale in this recipe as the original recipe calls, but you can also use pancetta or even bacon - sorry my Italians. As for cheese, I have used Pecorino Romano, but you can use Parmesan just as well- sorry my Italians (again).
Warm, soft and tasty, potato gnocchi is much simpler than you think. Prepare a larger batch, freeze while the gnocchi is spread out on a baking dish, and then transfer them to a bag. Keep the gnocchi in the freezer to have homemade potato gnocchi on the fly. This recipe is for 2 portions - 8 servings in total.
The ultimate crispy, homemade granola, adapted from the Tartine Cookbook. The game-changer in this recipe is the beaten egg white. Perfect for a snack as a bar or crumbled over yoghurt with berries and Greek Honey.
Inspired by the 'Street Food Latin America" show on Netflix, I got inspired by this cute lade in Salvador, Brazil, who was famous for her Moqueca. I dug a little bit online and came across a recipe to recreate this dish and posted it on my IG Stories. A Brazilian follower, was kind enough to send me some corrections, so here is the updated Moqueca recipe, as authentic as can be.
I'm not the one to play favourites, but this is the ultimate, deluxe Chocolate Cookie. Add some chocolate chips in the last step to take it to the next level. Recipe adapted from Tartine's First Cookbook.
Influenced by "Street Food Asia" on Netflix, made this Classic Thai hot and sour soup. Easy to make, light, healthy, gluten-free with the right amount of healthy protein. Perfect for lunch or a light dinner.
I am obsessed with lentils. I love, love, love everything about them. This is my favourite lentils salad, and the kids like it too. Lentils and fish make an excellent combination. You can also make it with any good quality canned tuna.
Making your own phyllo might seem scary at first. But you can master it easily with lots of patience and practice. Use the same phyllo recipe to make a variation of Greek pies, like Spanakopita or Feta Cheese Pie. You can always buy some at the supermarket, but homemade is better, by far. This pie is sweet and sour with lots of feta, a twist to the classic Greek feta cheese pie.
